Down here in Florida, it’s getting pretty hot out, so it’s time for some cold sweet treats! To make popsicles, you’ll need a silicone mold. This is the one I use. You’ll also need a blender. If you are in the market for a new blender, I recommend Vitamix. I have the Vitamix 5200 and I love it. It is expensive, but I doubt I’ll ever have to buy another blender!
Now for my popsicle recipes…Here are some flavor combinations I have enjoyed. If you discover some of your own, please share them in the comments! The instructions are the same for each recipe: put everything in your blender and blend until smooth. Pour into your mold and freeze for several hours.
Note the tips on using dates and cashew nuts in your blender. Both will blend up much faster if you pre-soak them for at least 20 minutes in hot water. Use this same trick when using cashews or dates in smoothies or salad dressing recipes.
Mint Chocolate Chip
1 avocado
1/2 cup cashews (Tip: soak in hot water for at least 20 minutes and drain.)
1/2 cup coconut cream
1/2 cup coconut milk
2 tbsp maple syrup
1/2 tsp peppermint extract
1/4 cup vegan dark chocolate chips
Pineapple Banana
2 bananas
1 cup fresh pineapple
1 tbsp maple syrup or 2-3 dates (Tip: soak in hot water for at least 20 minutes and drain.)
1/4 tsp coconut extract
Avocado Lime
1 avocado
1 lime, peeled (or the juice of 1 lime)
1 lemon, peeled (or the juice of 1 lemon)
1/2 cup coconut milk
2 tbsp maple syrup
Strawberry Daiquiri
2 cups fresh strawberries
1/2 cup coconut milk
1/4 cup coconut cream
1/2 tsp rum extract
1 tbsp maple syrup or 2-3 dates (Tip: soak in hot water for at least 20 minutes and drain.)
Orange Creamsicle
1 Navel orange, peeled (or the juice of 1 orange)
1/2 cup butternut squash (I used frozen squash, uncooked)
1/2 cup coconut milk
1/2 tsp vanilla extract
1 tbsp maple syrup or 2-3 dates (Tip: soak in hot water for at least 20 minutes and drain.)
Blueberry Vanilla
1 cup fresh blueberries
1/2 cup coconut milk
